Xelect are providing assistance and training in the establishment of a new texture monitoring facility at Dawnfresh, a major UK processor and farmer of high quality rainbow trout. As part of their ongoing effort to monitor product quality they are embarking upon a programme of routine mechanical texture analysis of trout fillets. The aim of the collaboration is to ensure Dawnfresh are generating accurate information using the best, scientifically validated techniques and that the data is comparable to that generated by the industry. We have many years experience in mechanical texture analysis and have previously provided training to Young’s Seafood and Marine Harvest.
